Seafood Stuffed Capsicums

INGREDIENTS:


  • 4 Large Capsicums
  • 2 Tbsp’s Olive Oil
  • 1 Onion, finely chopped
  • 3 Cloves of Garlic, minced
  • 200g Cooked Rice
  • 250g Raw Prawn Cutlets, chopped into small pieces
  • 250g Scallops, chopped into small pieces
  • 250g Diced Tomatoes (canned or fresh)
  • 125g Frozen Peas
  • 1 Tsp Dried Oregano
  • 1 Tsp Dried Basil
  • 1/2 Tsp Smoked Paprika
  • Salt and Pepper to taste
  • 125g shredded Mozzarella or Parmesan cheese
  • Fresh parsley for garnish

INSTRUCTIONS:

Step 1: Prepare Capsicums

  • Preheat your oven to 190°C
  • Cut the tops off the Capsicums and remove the seeds. Set aside.

Step 2: Cook the Seafood Mixture

  • Heat olive oil in a large skillet over a medium heat.
  • Add the chopped onion and cook until softened, for about 5 minutes.
  • Stir in the minced garlic and cook for another 1 minute.
  • Add the shrimp and scallops. Cook for 3-4 minutes.
  • Stir in the diced tomatoes and cook for another 2 minutes.
  • Add the frozen peas, cooked rice, oregano, basil, smoked paprika, salt, and pepper. Mix well and cook for another 2-3 minutes until everything is heated through and combined.

Step 3: Stuff the Capsicums

  • Spoon the seafood mixture into the prepared Capsicums, packing it in slightly.
  • Place the stuffed peppers upright in a baking dish.

Step 4: Bake

  • Sprinkle the tops of the stuffed Capsicums with shredded cheese.
  • Cover the baking dish with aluminium foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and slightly golden.

Step 5: Finish and Serve

  • Remove from the oven and let the Capsicums cool slightly.
  • Garnish with fresh parsley before serving.
