Crispy Prawn Katsu Burgers with Slaw & Spicy Mayo
This Japanese-inspired prawn burger is the ultimate comfort food — crispy, golden prawn katsu paired with fresh slaw and spicy mayo in a soft brioche bun. Quick to assemble and packed with flavour, it’s perfect for a fun weeknight dinner or weekend lunch.

INGREDIENTS:

4 prawn katsu sticks

2 burger buns (brioche or milk buns work best)

1 cup shredded slaw mix (cabbage, carrot, red onion)

2 tbsp Japanese mayonnaise (Kewpie recommended)

1 tsp sriracha (adjust to taste)

1 tsp rice vinegar or lime juice (for the slaw)

Pickled cucumber or radish (optional)

Olive oil (if pan-frying)
INSTRUCTIONS

Cook the prawn katsu:
Heat a pan with a little oil, or cook in an air fryer or oven until golden and crisp (usually 8–10 minutes). -
Prepare the slaw:
In a bowl, toss the slaw mix with a splash of rice vinegar or lime juice and a pinch of salt. Let it sit to slightly pickle. -
Make spicy mayo:
Mix the Japanese mayo and sriracha in a small bowl. Adjust spice level to your liking. -
Toast the buns:
Lightly toast the burger buns on a pan or under the grill until golden. -
Assemble the burgers:
Spread spicy mayo on both sides of the buns. Add a generous heap of slaw, 2 prawn katsu sticks per burger, and top with pickles if using. Close the lid and serve immediately.
