INGREDIENTS
- 1 Tasmanian Salmon Side
- 8 cups basil leaves
- 1 cup olive oil
- 1/2 cup toasted pine nuts
- 4 garlic cloves
- Juice of 1 lemon
- 1/2 cup of parmesan, grated
- Salt and pepper to taste
METHOD
Step 1
Preheat oven to 200°C
Step 2
Combine basil leaves, toasted pine nuts, garlic cloves and lemon juice in a food processor. Gradually add the olive oil until it becomes a thick paste. Mix in parmesan cheese and season with salt and pepper.
Step 3
Lay the salmon skin-side down on a lined baking tray. Season with salt and pepper.
Step 4
Spread the pesto on the salmon so it coats the entire salmon side evenly.
Step 5
Bake in the oven for 25 – 30 minutes until cooked.
Step 6
Serve with your side of fresh greens. Enjoy!
