Murray Cod Fish Red Curry

INGREDIENTS
- 2 pieces of Murray Cod portions
- 1 Onion, finely chopped
- 1 Zucchini, chopped
- 2 Carrots, chopped
- 1 Red capsicum, chopped
- 5 Broccoli florets
- 3 tbsp Red curry paste
- 400ml Coconut milk
- 1 tbsp Fish sauce
- 1 tbsp Ginger paste
- 1 tbsp Garlic paste
- 1 tbsp Brown sugar
- 1/2 cup water
- Oil
- 4 servings of cooked jasmine rice
METHOD
Step 1
Open Murray cod portion packets, dry the fish on paper towels, remove the skin, and then cut the fish into large cubes. Marinade 1 tbsp of curry paste over the fish. Set aside.
Step 2
Heat up oil in a pot, and add onion, ginger paste and garlic paste until brown and fragrant. Add 2 tbsp of curry paste, pour in coconut milk, 1/2 cup of water, fish sauce and brown sugar. Stir and add in the veggies (zucchini, carrots, capsicum, broccoli). Put the lid on and bring the pot to a boil.
Step 3
Add in Murray cod fish, and make sure the fish is submerged in the sauce. Cover and cook until fish turns white.
Step 4
Serve with rice and a squeeze of lime juice. Enjoy!
