Ingredients
For the Murray Cod Cutlets
- 4 Murray Cod cutlets, skin on
- 2 tbsp extra virgin olive oil
- 1 lemon, sliced
- 2 garlic cloves, finely chopped
- 1 tsp dried oregano
- 1 tsp smoked paprika
- Salt and cracked black pepper
Mediterranean Olive Salsa
- ½ cup cherry tomatoes, halved
- ¼ cup Kalamata olives, sliced
- 2 tbsp capers
- ½ small red onion, finely sliced
- ¼ cup fresh parsley, chopped
- 2 tbsp extra virgin olive oil
- Juice of ½ lemon
Method
1. Prepare the Murray Cod Cutlets
Pat the Murray Cod cutlets dry with paper towel. Season both sides with salt, pepper, oregano, and smoked paprika.
Drizzle with olive oil and rub with chopped garlic and lemon slices. Allow the cutlets to marinate for 15–20 minutes to absorb the flavours.
2. Cook the Cutlets
