Fried Blue Mackerel with Lemon Salad

Ingredients
For the Fried Whole Blue Mackerel:
- 4 whole blue mackerel, cleaned and gutted (ask your fishmonger to prepare them if needed)
- Salt and pepper, to taste
- Vegetable oil, for frying
- Lemon wedges, for serving
For the Lemon Salad:
- 2 cups mixed salad greens (e.g., rocket, baby spinach, and lettuce)
- 1/2 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup black olives, pitted
- 1/4 cup feta cheese, crumbled
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- 1 tsp honey
- 1 tsp Dijon mustard
- Salt and pepper, to taste

Prepare the Mackerel:
- Pat the whole mackerel dry with paper towels.
- Season the fish inside and out with salt and pepper.
- Heat a generous amount of vegetable oil in a large frying pan over medium-high heat.
- Fry the whole mackerel for 3-4 minutes on each side, or until the skin is crispy and the fish is cooked through. You might need to do this in batches, depending on the size of your pan.
- Drain the fish on paper towels.

Prepare the Lemon Salad:
- In a large bowl, combine the salad greens, cucumber, red onion, cherry tomatoes, olives, and feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad and toss to coat.

Serve:
- Arrange the fried whole mackerel on plates.
- Serve with lemon wedges on the side.
- Accompany with a generous serving of the lemon salad.
