Ingredients
For the Fish
- 600g flathead fillets, cut into strips
- 1 cup plain flour
- 1 tsp baking powder
- 1 tsp smoked paprika
- ½ tsp garlic powder
- Salt and cracked black pepper
- 200ml cold beer (or sparkling water)
- Vegetable oil, for frying
For the Lime Crema
- ½ cup sour cream
- 2 tbsp whole egg mayonnaise
- Juice and zest of 1 lime
- 1 tsp hot sauce (optional)
- Salt to taste
For the Slaw
- 2 cups finely shredded cabbage
- 1 carrot, grated
- ¼ cup coriander leaves
- Juice of ½ lime
To Serve
- 8 small tortillas
- 1 avocado, sliced
- Fresh coriander
- Lime wedges
- Pickled red onion (optional)
Method
- Combine the cabbage, carrot, coriander and lime juice. Toss together and set aside.
- Mix the sour cream, mayonnaise, lime zest, lime juice and hot sauce to make the lime crema.
- Heat vegetable oil in a deep pan to 180°C.
- In a bowl, whisk together the flour, baking powder, paprika, garlic powder, salt and pepper. Gradually whisk in the cold beer until you have a smooth batter.
- Pat the flathead dry, lightly dust each piece with flour, then dip into the batter.
- Fry in batches for 3–4 minutes until golden and crispy. Drain on paper towel.
- Warm the tortillas.

- 1 ripe mango, diced
- ½ red capsicum, finely diced
- ¼ red onion, finely diced
- 1 small jalapeño, finely chopped (optional)
- ¼ cup coriander, chopped
- Juice of 1 lime
To Serve

- 1 avocado, sliced
- Shredded cabbage

- Greek yoghurt or chipotle mayo (optional)
Method
- Combine the olive oil, cumin, paprika, garlic powder, coriander, lime juice, salt and pepper. Coat the flathead fillets and marinate for 15–20 minutes.
- Mix together the mango, capsicum, red onion, jalapeño, coriander and lime juice. Set aside.
- Heat a grill pan or barbecue over medium-high heat.
- Cook the flathead for 2–3 minutes per side until just cooked through and easily flakes with a fork.
- Warm the tortillas.
- Break the cooked flathead into large flakes.
- Fill each tortilla with shredded cabbage, grilled flathead, mango salsa and avocado slices.
- Finish with fresh coriander, an optional dollop of Greek yoghurt or chipotle mayo, and a squeeze of fresh lime before serving.
