Crispy Prawn Sliders
Ingredients:

500g king prawns, peeled and deveined
- 1 cup panko breadcrumbs
- 1/2 cup plain flour
- 2 large eggs, beaten
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Vegetable oil for frying
- 8 small brioche slider buns
- 1/2 cup mayonnaise
- 2 tbsp sriracha sauce
- 1 tbsp lemon juice
- 1 cup coleslaw mix (cabbage, carrot, etc.)
- 1/4 cup fresh coriander leaves
- 1 avocado, sliced
- Lime wedges for serving
Instructions:

Prepare the King Prawns:
- In a shallow dish, combine the panko breadcrumbs, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Place the flour in a separate dish and the beaten eggs in another.
- Dredge each king prawn in the flour, then dip in the beaten eggs, and finally coat with the panko mixture, pressing gently to adhere.

Fry the King Prawns:
- Heat vegetable oil in a large frying pan over medium-high heat.
- Fry the king prawns in batches until golden and crispy, about 2-3 minutes per side.
- Transfer to a plate lined with paper towels to drain excess oil.

Make the Sauce:
- In a small bowl, mix together the mayonnaise, sriracha sauce, and lemon juice. Adjust seasoning to taste.

Assemble the Sliders:
- Lightly toast the brioche buns.
- Spread a layer of the sriracha mayo on the bottom half of each bun.
- Add a slice of avocado, a few coriander leaves, and some coleslaw mix.
- Top with 2-3 crispy king prawns and a squeeze of lime juice.
- Close with the top half of the bun.

- Serve the sliders immediately with additional lime wedges on the side.
