INGREDIENTS
Curry Paste
- 4 Garlic Cloves, crushed
- Ginger, chopped
- 1 onion, chopped
- 1 tbsp Turmeric
- 2 tsp of Cumin, grounded
- 1 tbsp Curry Powder
- 1/2 cup of Coriander, chopped
- 1 tsp of Salt
Liquid
- 400ml Coconut Milk
- 1 cup of Chicken Stock
Fish & Vegetable
- 4 x Ling Fillets
- Red Capsicum
- Broccoli
- Broad
Step 1
Put all curry paste ingredients in a food processor and gradually add water. Mix until paste form.
Step 2
Heat oil in a hot pan or wok over medium heat. Add in curry paste and cook until fragrant.
Step 3
Pour in coconut milk and stock, simmer for 10 minutes. Reduce heat to low, add in fish fillets, capsicum, broad beans & broccoli, let it cook in the sauce for 8 minutes or until fish is cooked.
Step 4
Season with salt and pepper as required, serve with steamed rice. Enjoy!
