Fresh parsley, chopped, for garnish For the Chipotle Bourbon Butter:
100g unsalted butter, softened
2 tablespoons bourbon (use your favourite brand)
1-2 chipotle peppers in adobo sauce, minced (adjust based on spice preference)
2 cloves garlic, minced
1 tablespoon fresh lime juice
1 teaspoon smoked paprika
1 teaspoon honey
Salt and pepper, to taste
Instructions:
Prepare the Chipotle Bourbon Butter:
In a small bowl, combine the softened butter, bourbon, minced chipotle peppers, minced garlic, lime juice, smoked paprika, honey, salt, and pepper. Mix until well combined.
Place the mixture onto a piece of plastic wrap, form it into a log shape, and refrigerate for about 30 minutes to firm up.
Grill the Oysters:
Preheat your BBQ grill to medium-high heat.
Once the grill is hot, place the oysters on the half shell directly onto the grill, being careful to keep them level to avoid spilling the juices.
Add a slice of the prepared chipotle bourbon butter on top of each oyster.
Cook the Oysters:
Close the grill lid and cook for about 5-7 minutes, or until the oysters begin to curl around the edges and the butter is melted and bubbling.
Carefully remove the oysters from the grill using tongs.
Serve:
Transfer the oysters to a serving platter.
Garnish with fresh parsley and serve with lemon wedges on the side.
